Tell us how you came to run the Brisbane canteen.
I used to manage and be a franchise trainer for the Coffee Club for 13 years. A good friend of mine got a job as manager of the Ten cafeteria. She offered me a position as a barista and general counter hand as she knew I was ready to move on from my job. I accepted the position as I didn’t want responsibilities anymore. I guess that didn’t work out as I had planned, but 18 years on, I still wouldn’t change it for anything.
What do you love most about working in the Brisbane office?
The Brisbane office has become a family to me. Everyone here just cares about one another. We laugh together, we cry together. There’s no “I” in team here, even for little old me. It’s very humbling and a true honour to serve such wonderful people.
Which department has the biggest caffeine addiction?
I’m definitely going to say the newsroom. They need lots of strong coffee to keep the fire burning!
We hear nothing but rave reviews about everything that comes out of your kitchen – where do you get your cooking inspo from?
My inspiration has come from working in the industry with some outstanding chefs, including the great chef I have at present (Joan ), picking up great recipes along the way, and definately Google. I always refer to myself as “The Google chef.” Haha
What’s your go-to dish when you’re tired but still want something delicious and nutritious?
My healthy go-to that’s quick and easy is always baked salmon and salad.
What are your Top 3 favourite Brisbane cafes?
Now this is where it gets embarrassing. I don’t really go to cafes, I’m too much of a critic and I never really enjoy it. Every now and then, my father and I do tea and scones at a place at the Scenic Rim, so my top three picks would be:

- Ten Beans Cafe
- The Scenic Rim information centre.
